One of the points of contention has been this one: "Contrary to popular belief, coffee grounds are not acidic. After brewing, the grounds are close to pH neutral..."

I've never frothed anything other than cow's milk (and that very rarely), but it seems almond and hemp milks should both be at least as suitable for frothing as the oft-mentioned soy milk. Almond milk is about the consistency of regular...

I think I ask this every year when our monsoon season starts. Last year it wasn't much of a season. I believe we got less than 5" of precip for the year. But this past 10 days have seen rain almost every day. Not yet too much, but the small colonias are getting flooded and the dirt roads like the one I live on are washing out. Anyway, I notice the heavy...

Heard this morning on NPR that Doug Zell of Intelligentsia is downsizing his "venti" offerings. The story is that good coffee doesn't need to be consumed in such quantities as we have seen folks doing. Hope it works. My max size is 16oz. Since opening 10 years ago the choice has been 8oz or 16oz. "I want the biggest you have." "That would be 16oz." "I want...

A friend is having a hard time finding the ideal boiler temperature for his PID Gaggia Baby. Assuming you brew a little cooler for dark roast and a tad warmer for a medium/dark roast. What would be the ideal temp range for this machine.TIA. Bertie
