A friend tried to make sweet potato latkes, and they didn't cook up
nicely. She grated them, then mushed some of them in the food
processor, added the usual suspects (egg, flour, salt, pepper), and
fried until golden on the outsides.
They were not cooked all the way through.
Is it a temperature thing, too hot or too cold, or is there something
one...
