I am looking into buying a commercial meat slicer. Do the automatic ones work properly, or are there things they do not slice automatically well? thanks.

For natural gas cooking, is there a table of BTU ratings available for cooking things like steak, using a wok, frying a egg, etc. All I remember from chem and phys classes were BTU for boiling water at standard STP. I'm looking at natural gas ranges for the kitchen and see ratings for burners with something like 12,000 BTUs. Is there any normal cooking situations...

I love to cook, I love to eat, and I love to buy nice things. I do a lot of my cooking on a Big Green Egg, I like Global and Shun Japanese knives. I recently was exposed to folding steak knives. I don't get it, can somebody explain this one to me? What is the point of owning folding steak knives?

Help? :-/ While hand-washing a French White-type Corning Ware ceramic cooking dish I filled it with water and now the glass cover is stuck to the dish! I inherited a set of stainless steel pans (not nonstick). They're pretty decent quality - they're a heavy duty Costco set I gave them to my Dad a few years back. They all look kind of grungy - not dirty, exactly, but like someone just put them in the dishwasher without really scrubbing them, and any food residues that didn't come off right away got baked...

This Xmas my daughter & I are going to roast a goose(geese) for dinner. To feed the number of people we have we acquired 2 geese(8 & 7 lbs). The problem comes from finding a roasting pan with rack(cover not needed) that would hold both birds & still fit in my oven. Anyone who has the Panasonic toaster oven can cook a meaningful dinner for few people such as whole fish or a small chiken? Well, here are the results using the hood when steaming: * tinypic . com /4ggtg5f.jpg You can see where the lights are located on the front of the vent hood - and the vents are to the rear of the lights. Obviously the steam is going up onto the lights and making the stainless ledge that contains them wet with steam. Bad mistake to take the tiles...
