I'm opening a cooking school for kids in Louisiana. The state health department is not requiring me to have a commercial dishwasher. I can have a residential dishwasher that has a final rinse of 180 degrees OR a final rinse that introduces a sanitizing chemical such as chlorine. I've been unable to find a residential dishwasher that does either. Most of...

I have two old cast-iron griddles, long enough to fit over two burners, that are terrific for pancakes. However, I haven't tried to use them on my smooth-top (glass) range since I didn't know what would happen if I put them across two burners (i.e., would the combined heat be too much for the unheated space between the two burners?). I'd appreciate...

Just want to pass this infor along. Since my new oven has nice shiny racks, porcelain covered I think the term is, I thought that I might use the old 30" slide-in Jennaire racks to oven-clean the cast-iron utensils - in case something went wrong. I've not used the self-cleaning oven feature yet. Much to my surprise, the racks didn't fit. The new oven...

Amazon has several pressure cooker books listed, as do the results from Google. Are there one or two "better" books out there which you folks have tried and recommend for or against?

We're getting ready to upgrade some appliances, including the dishwasher. The dishes come out of our Kitchenaid dirtier than they went in. I'm considering the Bosch SHE/SHX 43C0, and the GE Profile PDW9980NSS. I understand that because the way the Bosch heats the water, plastic can be washed on the lower rack. I'm pretty sure the Profile has the...

On * w w w .panman . com /cleaning.html says: I DO NOT recommend the following methods of cleaning: Self Cleaning Oven - Although not as great a risk as throwing it in a fire, the intense heat of a self cleaning can warp a skillet. There is also a risk of warping the piece. I recall that this was suggested, and think it is an excellent idea. Hmm -...

I read somewhere that copper cookware is so expensive because of the high demand for copper in electrical wiring, precisely because of its excellent conductivity. Can anyone tell me if they've heard the same explanation, or better yet, point out a reputable source that states that? If the information I have is completely off, I'd appreciate it if someone...

Our many-year-old toaster oven is taking longer and longer to make toast, so we figure it's time for a new one. Toast is the main priority, but we also use for top-browning, reheating, and the like. We do not need convection or really large capacity. I know that dedicated toasters are supposed to make the best toast, but I like the idea of a dual purpose...

I purchased from amazon a Sassafras Deep Dish Baker * tinyurl . com /ytr85a I was a bit disappointed in the color of it -- really a yukky on-the-dark-side of grey vs. the lighter color of beige. Not very appetizing looking. It is made in Taiwan, and I'm wondering if all Sassafras items are now or have been made in Taiwan. The instructions say "BEFORE...

I see the Ikea put their name on major appliances like range, hoods, double ovens, refrigerators and so on. Anyone knows who makes it for Ikea and is it any good? How about availability of parts and service?

Hi, will a scoop of Bar Keepers Friend powder in the dishwasher along with detergent get stains off stainless steel? Can it harm the dishwasher? Thx

I have not sharpened my knives since I bought them about 6 years ago. Should I ALWAYS start with the coarse stone or can I start with the medium stone? I figure if a knife does not cut a tomato then I should use the coarse one first, but what about the knives that are not really dull? Thoughts/comments?? Thanks! Eddie G

I suppose a counter is a little off topic, but hopefully not too much. We are remodeling our kitchen and have these questions about granite counters. The literature says granite cooktops are heat resistant. Do people take hot skillets or pans from the cooktop or oven and put them on the granitite? Does the granite need to be resealed? How of...

My wife and I are remodeling our kitchen and are trying to decide between a 30 inch and a 36 inch gas cooktop. We had pretty much decided on a 6 burner 36 cooktop (probably Viking), but now we aren't sure why we need 6 burners. There are only two of us, but we have people over for dinner maybe 4 times a month. So we would be very interested in comments...
