Cooking Corn Basics
Boiling:
Remove husks and silk. Drop ears into plenty of rapidly boiling
unsalted water. (1 tsp. sugar may be added if desired.) Cook 3 to 4
minutes for young corn, 5 to 7 minutes for more mature cobs. Remove
from water at once as corn becomes soggy-tasting if left soaking.
Microwaving
With husks: Peel back husks and remove silk. Spread corn with soft
butter, if desired. Replace husks and secure with string or rubber
band. Place in oven about ½" apart and microwave with full power,
turning several times during cooking. If microwaving four cobs: re-
arrange half way through cooking so that cobs in the centre are moved
to outside: 2 cobs - 7 to 8 minutes; 4 cobs - 10 to 11 minutes.
Without husks: Place husked corn in shallow baking dish leaving at
least ½" between cobs. Add 1 Tbsp. water and cover dish. Microwave
with full power: 2 cobs - 3 to 5 minutes; 4 cobs - 5 to 7 minutes Let
stand, covered, 5 minutes before serving.
Barbecuing
With husks: Remove large outer husks, turn back inner husks, and
remove silk. Spread with soft butter or margarine and pull husks back
over corn. Wrap each ear in heavy foil, twisting ends to seal. Roast
directly on medium coals for 10 to 15 minutes, turning once. To
serve, pull back husks and snip off.
Without husks: Remove husks and silk. Place each ear on heavy foil.
Add 1 Tbsp. butter or margarine and 1 Tbsp. water, plus pinch of herbs
if desired. Wrap securely, twisting ends to seal. Roast directly on
coals for 10 to 15 minutes or on grill for 15 to 20 minutes, turning
once.
Corn Country Method: Remove silk. Leave husks in place. Soak corn 3-4
hours. The longer the better. Barbecue until husks are charred or bake
at 475F for 20 -25 minutes.
Fresh Corn Salad 1
¾ cup (180 ml) light sour cream 1 cup (250 ml) finely diced red
peppers
1 tsp (5ml) Worcestershire sauce 1 cup (250 ml) finely
sliced green onions
½ tsp (2ml) seasoning salt 1 (one) clove garlic, minced
3 cups (750 ml) leftover fresh corn
kernels (approx 3-5 ears)
In a bowl large enough to hold all salad ingredients combine first
three ingredients. Add remaining ingredients. Cover and refrigerate at
least 2 hours before serving.
Makes: 4 servings
