I think you need to get out more. Play some more custom guitars. Try a
couple of Santa Cruzes, a Froggy Bottom or two. Or, get your best
Gibson or Martin or Taylor and come to my house. I'll let you play it
against my custom. Mine was made by a guy you probably haven't heard
of, he's not famous and they don't carry his guitar in many stores,
largely, because he only makes about 16 a year. Also, to buy one like
mine (adirondack over brazilian) would run about ten thousand today.
However, there really is a difference.

Custom is custom. Cars, guitars, guns, suits, furniture, landscape, etc...
