Yeah? Well, if you love grilled pineapple spears, you will likely love
this:

@@@@@ Now You're Cooking! Export Format

Baked Pineapple With Brown Sugar And Kahlua

desserts, quick and easy

1/2 small pineapple; peeled, cored
3 tablespoons brown sugar
1 1/2 tablespoons butter
1/4 teaspoon cinnamon
3 tablespoons Kahlua; or other coffee
; liquer
vanilla ice cream

Preheat oven to 400° F. Cut pineapple into 12" thick spears. Arrange
pineapple in single layer in baking dish. Sprinkle with brown sugar.
Dot with butter and sprinkle with cinnamon. Drizzle Kahlua over. Bake
until pineaple juices bubble, 25 mins.

If necessary, transfer juices to small saucepan and boil untl
thickened.

This is very good and very quick.

ohmygawd. I am so making this tomorrow! Instead of serving with ice
cream (which I don't have) I'm going to put a dollop of creme fraiche on
top (which I had been looking for ways to use up) instead. I just
bought a ripe pineapple today ($2.99) and while clearing out the pantry
a bit had just found a bottle of homemade "kahlua" neighbors made and
sent over.

That's one of the reasons they never developed an empire of their own.
