A late Hanukkah question

A late Hanukkah question

A friend tried to make sweet potato latkes, and they didn't cook up
nicely. She grated them, then mushed some of them in the food
processor, added the usual suspects (egg, flour, salt, pepper), and
fried until golden on the outsides.

They were not cooked all the way through.

Is it a temperature thing, too hot or too cold, or is there something
one should do to the sweet potatoes like pre-cooking them or something?

My daughter made sweet potato latkes last night by shredding the raw
sweet potatoes,using the egg, flour, salt & pepper and then frying.
There were problems in keeping the oil hot enough and in getting them
done evenly, but none of them were raw. She has made them before and we
think it was the pan and the absence of a useful oil thermometer.

A few rules, 1) never ever use a food processor when making latkes, the
potatoes and onions should be grated by hand. 2) Squeeze the liquid out of
the grated potatoes and onions, I use my hands for this. 3) After you've
squeezed the liquid out you add the egg, matzoh meal, salt and pepper.
Matzoh meal works better than flour. 4) Use peanut oil with a little
chicken fat for flavor.

Has your friend ever made traditional latkes before? I wonder if she made
them too fat?
