Reference referrals needed

Hi!

I will be teaching a cooking oriented series of classes on how Jews around
the world celebrate Shabbat, Pesach and Rosh Hashanah. Any recommendations
for resources, both cookbooks and other sources (history texts, articles,
even fiction which is well researched and documented), would be greatly
appreciated. Am hoping to include how regional ingredients and culture have
influenced the local traditions for these holidays.

Gil Marks has some interesting views, I believe his book is "The World
of Jewish Cooking." There's lots of commentary on the OU site,
http :// www .ou.org . Servi-Machlin in "The Cuisine of the Italian Jews"
seems to be definitive for that community (fascinating recipe for goose
pastrami, et al.). Just a start...
