Tuna Ideas?

Tuna Ideas?

I've got a supply of canned tuna. I'd like ideas for using it, that are
not salads.... and low-carb, so tuna noodle casserole or it would seem
tuna loaf is out :(.

Classic Salad Nicoise? Or add flaked tuna to 3 bean salad, sautéed and
herbed warm veggies, baked stuffed tomatoes (mix w/egg whites and olive oil
instead of mayo)....

Thanks, a Nicoise is standard around here in summer months (substituting
cauliflower and the small red potatoes for the potatoes), and I can get
Chinese long beans doing a very good impression as haricot vert--or
asparagus in season. I also poach a chicken breast instead of tuna for
one sometimes. But it's not main dish salad weather here, at least not
yet :(. I've got an army of tuna salad recipes, but few non/low carb
main dish in my repertoire.

The stuffed tomatoes might be a good idea, though... (stuffed onions
because I'm the only one in the house that eats tomatoes, sigh). I
suppose I could make a non-carby tuna cake filling so I don't have to
worry about binding.

That reminds me of seeing a stuffed zucchini recipe where they used tuna for
the stuffing - can't recall where though. Onion works, as you said. How
about peppers? Or something akin to stuffed cabbage?

there is always that old standby for hard times, tunaghetti, in your case
using spaghetti squash or whole string beans in place of the pasta.
simply rinse the tunaso the whole dish is not oversalted, ad add to a
marinara or other tomato sauce(a simple tomato, onions, garlic and fresh
basil would be nice). use this to top the squash or string beans. Serve
with parmigian cheese.

This was a favorite with my kids back in the penny counting days.

Yeah, I was making a Fusilli Siciliana with tuna, olives, capers, (of
course, garlic and onions), red pepper flakes, and lemon zest.

I've got to think about putting up more than a few pints of tomato sauce
this year, since all the commercial brands have corn syrup in them and
the more I read about corn syrup the less I like it.

Barbara Kafka, in Microwave has a quike, easy and quite good tomato
sauce that can be made in fairly short order. My variation on it it to
first soft saute some union in a little olive oil in the microwave in a
large (2-3 qt) pyrex measuring cup, covered with plastic wrap. About 5
mins does this. then add a 28 oz can of tomatoes I use the lower sodium
ones, whole plum and break them up Lydia style with my CLEAN hands. add
some chopped garlic and microwave on hish fo rabout 5 mins. Then add some
fresh basil and black pepper adn microwave about another 2-3 mins. All
finished.

One cooking vessel no other bowls necessary.

Tuna lasagna with sliced eggplant or zucchini instead of noodles?

Tuna and vegetable kugel, (spinach and mushroom comes to mind) with a
milk/eggwhite binder. I usually make mine (which does have elbow
macaroni) with red peppers, onion, lots of garlic, and seasonings.
The milk, cheese and bread make a rather tasty "white sauce", so if
you can work that much carbs into your daily allowance, it's
definitely worth it. This is comfort food from my childhood.

Tuna Casserole
Source: newspaper clipping, 1940's
Serves appx 8

1/4 pound American or other mild, meltable cheese
1 cup milk
1 slice diced pumpernickel bread
1 4 oz jar pimentos (roasted peppers)
1 onion, chopped
1 6 oz can tuna, drained
3 eggs
2 cups cooked pasta
Salt and pepper to taste
2 T butter

In a 350^F oven, put the 2 Tablespoons of butter in a loaf or
casserole dish.

Heat first three ingredients in a small pan until cheese is
melted, and makes a sauce.

Add next 6 ingredients and mix well.

Pour mixture into the casserole dish, and spoon the melted
butter over the top so that it will brown.

Bake in 350^F oven for 1 hour, until set and top is brown.

What you can do with it depends whether it is solid white,
chunked, and whether packed in water or oil.

An all-around recipe (I never used measurements) would be to
saute it in curry and oil, then mix in canned crushed tomatoes
(usually have no added sugar) and serve over high fiber pasta,
spaghetti squash or whipped cauliflower.

Now that's an idea--I've not thought of curried tuna in any terms except
for salads.
