What is broster checken?

Its fried under pressure and suppose to taste better than the conventional
deep fried chicken. Is this true? How healthy is it and is the broster
machine available for purchase?

It's "broasted." We had a local place (Whitey's) in DC that specialized in
broasted chicken, but it went out of business about four years ago, after 20+
years of success. Don't know what was so special about it -- it tasted pretty
ordinary to me.

KFC is pressure cooked. You can do it at home. I do it all the time.

What's the big deal?

Cousins of mine in California ran a "Broasted Chicken" joint in Garden
City for years. Their machines were made by, stand by for this, Henny
Penny Company and were huge. Don't think they even make any for home use.

I bought a Fagor pressure cooker/broaster fryer about 10 years ago
specifically so I could prepare broasted chicken at home.

I absolutely love it. Chicken comes out crispy on the outside, moist
and juicy tender on the inside. Mmmmmm.

I love broasted chicken but can't for the life of me see how a pressure
cooker could produce a crispy anything. Obviously I know nothing about
them, but if it makes it like I've had in stores, I'll buy one. Frying
chicken in a skillet is a PITA.

A pressure cooker isn't expensive, and it does make chicken like KFC.

Well the Fagor cooker is around $100, which isn't cheap. From some
research, I see as many articles talk about how wonderful the chicken
is done this was as I do articles on the danger of cooking oil under
pressure. Like the one below. I assume the latter comes from people that
think that speed kills, not stupid drivers. What's the real deal - could
there be disasterous results if done "wrong"?

I have spent hours trying to find a Fagor "pressure fryer", which from
what I can find is the only Fagor model capable of doing pressure cooking
with oil. Their other models are purportedly not safely capable of this.
I even saw saying that Fagor no longer markets the unit that can. It was
reported to have a very strong bar that went across the whole unit to
lock down the lid, but I see no such models on any website I can find. I
saw some other info on a brand called Magefesa.

Can anyone definitely say what brands/models can do broasting?

I was looking into buying a pressure fryer a couple of years ago. I saw
references to the Fagor Pressure Magic, but from the evidence I could
find, it looked some other company was now manufacturing the line. In
any case, a pressure fryer called Pressure Magic is still for sale. Take
a look at

Googling for "Fagor marine pressure cooker". Its the same thing.

A quick Google search for "Fagor pressure fryer" yielded one for sale
on E-Bay and also another site selling a competitor's model which

I talked to fagoramerica,com and confirmed that the Marine Pressure
Cooker is the only model suited for broasting chicken as LeeBat
mentioned. I found two places to purchase:

www .pro-selections,com
www .burgees,com

The first is the outlet for Fogar professional products and the later
is a better deal. I am not familiar with either one, but were the only
ones I could find. I'll have to save my pennies and decide if it's
worth the extra money.

Well, I've forgotten exactly when I bought mine but its in the range
of about 10 years ago. Given that I live (God willing) another ten
years, any cost differential becomes insignificant.

Also, my son, who cooks for a living, has told me he wants first dibs
on it when I move on to my just rewards.

Of course, YMMV.
