Asparagus cleaning

Asparagus cleaning

Someone posted recently about instructions to soak asparagus in cold
water for a while before preparing. I now know why. To get the dirt
out. Yesterday I put a bunch in a container of water for an hour or
so. Dirt and sand in the bottom of the container when I took the
asparagus out.

I have about 10 pounds that I have to do something with tomorrow. Pick
out some for pickling and anything we are not going to eat immediately
goes into soup. I am putting the soup in the freezer in vacuum sealed
bags. The soup recipe is from Emeril. It used the whole spear so
there is no waste.

Yes, often dirt and sand which is held in the spear tips, and sometimes
even little bugs that the soak will drive out of the heads.

I generally soak broccoli and cauliflower from our garden in salted
water for a couple of hours for the bug reason. No sand in our gardens,
just loam and clay down to about 2000 feet (used to be the bottom of the
Gulf of Mexico a zillion years ago).
