Stuffed Chicken Breasts

Stuffed chicken breasts

4 chicken breasts (thawed)
1 pound of bacon
4 thick slices of munster cheese
1 roll of breakfast sausage
2 eggs
1/4 cup buttermilk
flour
1/2 teaspoon baking soda
1/2 teaspoon baking powder
corn flakes
salt
pepper
garlic powder
crushed red pepper
spices to taste.


Begin by cooking bacon and sausage until crisp and browned and
transferring to paper towels and patting dry. Then crumble both into small
chunks. Slice the chicken breasts down the middle as if to butterfly them
but only making a small pocket inside. Then stuff the chicken with the
bacon and sausage mixture as well as a piece of the munster cheese.

At this time you'll need to prepare your batter. Wisk the egges and
buttermilk in a small pie plate. Give each piece of chicken a healthy wash
or dip in the egg and buttermilk. Then stir the dry ingredients together,
except for the corn flakes, adding seasoning to taste and roll the chicken
in the batter.

Once all pieces are coated, place in 375 degree oil and fry for 5-6
minutes. Remove from oil and transfer to paper towels. Roll each piece of
chicken in crushed corn flakes and return to oil and fry an additional 5
minutes or until done.
