Dressing
1 tablespoon white balsamic vinegar
2 teaspoon sherry wine vinegar
1 tablespoon shallot -- minced
3 tablespoon extra virgin olive oil

8 Butterhead Lettuce leaves
4 cup mache
1 med Granny Smith apple -- cut into matchstick sized strips
2 ounce Manchego Cheese -- but into strips
1/4 cup salted almonds -- coarsely chopped, preferably Marcona
almonds, roasted
To make the dressing; Combine both the vinegars and the shallot in a
small bowl. Whisk in the oil and season with salt to taste.
To make the salad; Line each of four plates with two butterhead
lettuce leaves. Drizzle with a small amount of the vinaigrette.
Combine the mache, apple, cheese, and almonds in a large bowl. Add
enough of the vinaigrette to coat the salad lightly and toss well.
Divide the salad evenly among the plates, on top of the lettuce.
Recipe Notes
Marcona almonds are Spanish almonds. They are flatter than regular
almonds, super crunchy and have a sweet flavor. You can substitute
California almonds. Balducci's always has Marcona almonds in their
cheese department.
