1/2 cup walnuts -- toasted and chopped
2 tablespoon sour cherries dried -- chopped
2 tablespoon honey
2 slice whole grain bread
5 tablespoon Ricotta Fresh -- (recipe calls for 4 to 6 tablespoons)
1 tablespoon mint -- torn and lightly packed
Pepper
Fleur de sel
2 cup baby greens -- lightly packed
2 teaspoon walnut oil toasted
2 teaspoon cherry balsamic or balsamic vinegar
Combine the walnuts, cherries, and honey in a small bowl. Spread each
slice of toast with a thick layer of ricotta. Spoon the walnut mixture
over the ricotta, dividing evenly. Sprinkle with mint leaves, freshly
cracked pepper, and fleur de sel Toss the greens with the walnut oil,
vinegar, a pinch of fleur de sel, and a grating of pepper. Divide the
salad and tartines between 2 plates and serve.
