follow additional links provided from there) is incorrect and
offensive. The Weston A. Price Foundation seems to rely very heavily
on the writings of a Mary G. Enig, PhD, who owns a consulting firm in
the Washington, DC, area. Following subsequent links generally come
back to her writings, which are so limited in scope that one might
conclude she consults for (and publishes findings for) a small group
of people who all share similar economic interests - mainly promoting
tropical oils. Her book, published in 1993, is no longer available
and there is no information (at Amazon . com ) on when or if, it will
again be available. If her information is so valuable, why it it not
available and widely promoted? the web site for her firm posts a
position that was open in Feburary 2006. In my opinion, there is
nothing to make her, or her firm, appear to be creditable.
In case you may be interested, I believe a balanced diet, combined
with exercise, it in the best interest of any human who desires to
live as long as possible. I use dry, shredded coconut in several
recipes. The oil remaining on my fingers after handling it indicate
that while the water may evaporate, the oil does not. I like the
flavor it adds and don't worry about the possible bad effects. I also
use coconut milk occasionally - mostly in Pina Coladas. I also use
butter in everything that calls for butter or margerine. I won't
allow margerine in my house, much less in my kitchen! I consume
moderate amounts of animal fat through eating beef and pork. I enjoy
a good steak and prefer bacon or sausage with breakfast. I grew up on
that diet. Although I never buy lard, I do use bacon drippings
frequently in cooking. (Alaska Sourdough is a good example.) But, I
also use vegetable oils whenever they better suit the circumstances.
Canola oil works great for deep frying! I just don't worry about
eating moderate quantities of just about anything that produces
good-tasting food.
In summary, I believe that minimizing consumption of all fats,
combined with exercise, is generally good advice for almost anyone.
Making educated choices about food intake is good for everyone. Your
stating, with some implied degree of authority, that consumption of
coconut oil, palm oil, and lard, etc, is healthier than consumption of
vegetable oils is, in my opinion, simply stupid.
