It is vegetarian, but it isn't so healthy with the whole egg and
butter. I prefer to just scramble egg whites and add some seasoning.
Of course it is not really much like a crepe then. As an alternative
though, you can make a whole wheat bread using salt, yeast and whole
wheat only. Let is rise, then flatten it out and cook it on both sides
with a little spray oil in the pan if desired. This is actually
delicious. I figured out a long time ago that there are few things
that don't taste good that have butter, eggs, cream and sugar, along
with lots of fat, but that doesn't make them healthy. I surmise this
is a survival instinct where we sought out high fat, high-calorie food
cause we never knew when the next meal might come our ways, in
ancient times. Yet, nature doesn't really care if you drop dead of a
coronary after you have procreated. Crepes sure are good though,
particularly with whipped cream or jam. I just don't eat such things.
Vegetarianism tends to be healthy, but there are lots of exceptions
since a veg. diet might include high fat, including butter fat from
milk (hence cholesterol), sugar, corn sweetners and the like. dkw
