Some old-time, well-known pop/rock classics I consider
to have a pretty good "stereo image" (especially in the
beginning of the song) are:

Queen - I want to break free
Fleetwood mac - Big love

I'm not sure if this is what you meant though

How can a pan-potted mono-miked multi-channel rock recording have any image?
It's not stereo.

The audience perhaps?

I have Peter Frampton's "Do you Feel like we do" from the remastered
Frampton Comes Alive album.

It is not so much the music that has depth, but the audience. Wow. The
thousands of thronging fans clapping in unison, that guy whistling over
there about 70 to 80 feet back to the right side. Then there's the girl
screaming at the top of her lungs, but she doesn't sound so loud because
she is so far back in the crowd, behind my left speaker:)

Yes, the band and their music don't have much depth. The good imaging of
the audience, though, really brings this track alive for me.
